{"id":472,"date":"2019-03-11T12:27:00","date_gmt":"2019-03-11T11:27:00","guid":{"rendered":"https:\/\/bxeinj.myraidbox.de\/?post_type=rezept&#038;p=472"},"modified":"2021-05-03T14:17:19","modified_gmt":"2021-05-03T12:17:19","slug":"vegetarian-quinoa-beet-burger","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/vegetarischer-quinoa-rote-beete-burger\/","title":{"rendered":"Vegetarian quinoa and beet burger"},"content":{"rendered":"<p><strong>Rye burger bun ....for 10 buns<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>100g spelt flour<\/li><li>350g rye flour<\/li><li>150g wheat flour<\/li><li>200g buttermilk<\/li><li>100 ml water<\/li><li>50g butter<\/li><li>60g applesauce<\/li><li>1 egg<\/li><li>1 pack of dry yeast<\/li><li>To coat: 1 egg, 2 tbsp buttermilk<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Mix the yeast with the lukewarm water and knead all the ingredients into a soft dough using a food processor. (at least 10 minutes) Transfer the finished dough to a bowl, cover and leave to rise for 45 minutes.<\/p>\n\n\n\n<p>Transfer the dough from the bowl to the floured work surface and divide into 10 equal pieces. Fold the dough pieces a few times and round them. Place on baking paper and press flat. Brush with the egg-buttermilk mixture. Leave to rise again for about 30 minutes.<\/p>\n\n\n\n<p>Bake at a firebrick temperature of 180 C and a top heat of approx. 260 C for approx. 18 - 25 min.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"683\" height=\"1024\" src=\"https:\/\/bxeinj.myraidbox.de\/wp-content\/uploads\/2020\/05\/MA6B4575-683x1024.jpg\" alt=\"\" class=\"wp-image-475\" srcset=\"https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/05\/MA6B4575-683x1024.jpg 683w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/05\/MA6B4575-350x525.jpg 350w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/05\/MA6B4575-200x300.jpg 200w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/05\/MA6B4575-768x1152.jpg 768w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/05\/MA6B4575.jpg 1000w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><\/figure>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Quinoa beet for 4 people<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>100g cooked quinoa<\/li><li>\u00bd can chickpeas<\/li><li>3 slices of white bread mixed<\/li><li>1 large or 2 small pre-cooked beet tubers<\/li><li>1 onion<\/li><li>1 garlic clove<\/li><li>2 eggs<\/li><li>Some flour<\/li><li>50g walnuts<\/li><li>Rosemary, thyme, salt, pepper, chili<\/li><\/ul>\n\n\n\n<p>Fry the onions and garlic in a little oil or butter. Finely blend the beet and chickpeas with the quinoa, toast, chopped walnuts, eggs and saut\u00e9ed onions to form a homogeneous mixture. Season to taste with salt, chili, herbs and pepper. If necessary, firm up the consistency with a little flour or breadcrumbs.<\/p>\n\n\n\n<p>The mixture can then be formed into paddies and fried on both sides in clarified butter or oil in a cast iron pan over an open flame in the Merklinger.<\/p>\n\n\n\n<p><br><strong>Avocado cream<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 avocados<\/li><li>Salt and pepper<\/li><li>Juice of one lemon<\/li><li>Garlic<\/li><li>Onion<\/li><li>1 tbsp cr\u00e8me fra\u00eeche Cut the avocados in half and remove the stone, remove the flesh with a spoon and mash finely with a fork and the lemon juice.
