{"id":470,"date":"2020-01-20T12:23:00","date_gmt":"2020-01-20T11:23:00","guid":{"rendered":"https:\/\/bxeinj.myraidbox.de\/?post_type=rezept&#038;p=470"},"modified":"2021-05-03T14:16:02","modified_gmt":"2021-05-03T12:16:02","slug":"grilled-gilthead-with-creamy-beet-risotto-and-parmesan-cheese","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/gegrillte-dorade-an-cremigem-rote-beete-risotto-mit-parmesan\/","title":{"rendered":"Grilled sea bream with creamy beet risotto and parmesan"},"content":{"rendered":"<p><strong>For 4 people<\/strong><\/p>\n\n\n\n<p><strong>Grilled sea bream<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 gilthead bream, ready to cook<\/li><li>Sea salt or coarse salt<\/li><li>1 lemon<\/li><li>Salt and pepper to taste<\/li><\/ul>\n\n\n\n<p><strong>Beet risotto<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 red onion<\/li><li>200g beet (pre-cooked)<\/li><li>2 tablespoons butter<\/li><li>350g risotto rice<\/li><li>Salt and pepper to taste<\/li><li>900 ml vegetable stock<\/li><li>350 ml dry white wine<\/li><li>80g finely sliced Parmesan cheese<\/li><li>4 tablespoons walnut kernels<\/li><li>1 cup of sour cream<\/li><li>Herbs to taste<\/li><\/ul>\n\n\n\n<p>Have your gilthead prepared ready to cook by your trusted dealer. You should use the 3 S formula here. Clean, acidify, salt, you can also play around with other ingredients, such as coarse pepper or herbs.<\/p>\n\n\n\n<p>Risotto<br>(don't worry..... is easy to prepare)<br>Melt the onion in butter and add the washed risotto rice, saut\u00e9 for a few minutes while stirring and deglaze with a good dash of wine, add the vegetable stock, but only a little at a time. Repeat this while stirring until the rice is still very firm to the bite and set aside. (Can also be made 5 hours before the guests arrive) Mix the beet with salt, pepper, sugar and a little olive oil.
