{"id":37969,"date":"2024-11-29T08:04:19","date_gmt":"2024-11-29T07:04:19","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=37969"},"modified":"2024-11-29T08:04:20","modified_gmt":"2024-11-29T07:04:20","slug":"grillroot-no-4-the-klausi-2","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/grillwurz-nr-4-der-klausi-2\/","title":{"rendered":"Grillwurz No. 4 - The Klausi"},"content":{"rendered":"<p><strong>You will need:<\/strong> Fireclay stones<br><strong>Working hours: <\/strong>35 minutes<br><strong>Baking: <\/strong>ca<strong>.<\/strong> 30-35 minutes<br><br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Top heat: <\/strong> approx. 250-280\u00b0C<br><strong>Fireclay brick: <\/strong> approx. 160-180\u00b0C<br><br><strong>In the BOBBY:<br>Preheating: <\/strong>approx. 10-15 minutes<br><strong>Top heat: <\/strong> approx. 220-250\u00b0C<br><strong>Fireclay brick: <\/strong> approx. 140-160\u00b0C<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> (for 4 loaves)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>The evening before:<\/strong><\/p>\n\n\n\n<p><strong><strong>For the starter dough<\/strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 g wheat flour type 550<\/li>\n\n\n\n<li>300 ml water (27\u00b0C)<\/li>\n\n\n\n<li>3 g yeast (room temperature)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>On baking day:<\/strong><\/p>\n\n\n\n<p><strong><strong>For the main dough<\/strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zest of 1 untreated lemon and 1 untreated orange<\/li>\n\n\n\n<li>3 medium-sized apples<\/li>\n\n\n\n<li>a little lemon juice<\/li>\n\n\n\n<li>300 ml milk (room temperature)<\/li>\n\n\n\n<li>5 g yeast (room temperature)<\/li>\n\n\n\n<li>Pre-dough<\/li>\n\n\n\n<li>650 g wheat flour type 550<\/li>\n\n\n\n<li>100 g ground almonds (without skin)<\/li>\n\n\n\n<li>25 g soft butter&nbsp;<\/li>\n\n\n\n<li>10 g salt<\/li>\n\n\n\n<li>130 g honey<\/li>\n\n\n\n<li>3-4 tsp speculaas spice<\/li>\n\n\n\n<li>100 g almond slivers<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>In addition:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 egg yolk + 1 tbsp cream<\/li>\n\n\n\n<li>100 g almond slivers<\/li>\n\n\n\n<li>Flour for the work surface<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>The evening before:<br>For the starter dough:<\/strong><\/p>\n\n\n\n<p>Place the flour, water and yeast in a large bowl and mix well with a whisk. Cover and leave to stand at room temperature for 12-18 hours.<br><br><strong>On baking day:<br>For the main dough:<\/strong><\/p>\n\n\n\n<p>Wash the lemon and orange in hot water and finely grate the zest.<br><br>Wash and peel the apples and remove the core. Cut into cubes and sprinkle with a little lemon juice.<br><br>Pour the milk into the mixing bowl of the food processor and dissolve the yeast in it.<br><br>Add the starter dough, flour, almonds, butter, salt, honey, speculoos spice and lemon and orange zest and knead into a smooth dough. Add the almond slivers and diced apple and knead in briefly. (This is best done with your hands).<br><br>Cover the dough and leave to rise at room temperature for 2.5-3 hours.<br><br>Then place on the floured work surface. Roughly stretch the dough into a rectangle, divide into 4 equal strips and shape into an oblong.<br>Whisk the egg yolk and cream in a small bowl. Brush the bread with the mixture and sprinkle with almond slivers.<br><br>Then turn 2-3 times around its own axis to form a \"root loaf\".<br><br>Cover and leave to rise for a further 30-40 minutes at room temperature.<br><br>During this time, heat the Merklinger to approx. 250-280 \u00b0C (BOBBY approx. 220-250 \u00b0C).<br><br>Pick up the root loaves with the floured pusher, place them in the<br>Bake for 30-35 minutes until golden brown and crispy.<br>\u00a0<br>Remove the loaves and leave to cool on a wire rack.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Tip:<br><\/strong>\"Klausi\" is the perfect companion during the Christmas season.
