{"id":37964,"date":"2024-11-29T07:47:29","date_gmt":"2024-11-29T06:47:29","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=37964"},"modified":"2024-11-29T07:47:29","modified_gmt":"2024-11-29T06:47:29","slug":"christmas-fruit-bread","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/weihnachtliches-fruechtebrot\/","title":{"rendered":"Christmas fruit bread"},"content":{"rendered":"<p><strong>You will need:<\/strong>\u00a0Firebricks\/spacer grate<br><strong>Working hours:<\/strong> 40 minutes<br><strong>Baking:<\/strong> approx. 35-40 minutes<br><br><strong>Preheating:\u00a0<\/strong>approx. 30 minutes<br><strong>Top heat:\u00a0<\/strong>approx. 200-220\u00b0C<br><br><strong>In the BOBBY:<br>Preheating:\u00a0<\/strong>approx. 10-15 minutes<br><strong>Top heat:\u00a0<\/strong>approx. 180-200\u00b0C<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients <\/strong> (for 3 small loaves)<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the filling:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g dried pears (Hutzeln)<\/li>\n\n\n\n<li>150 g figs, dried<\/li>\n\n\n\n<li>150 g apricots, dried<\/li>\n\n\n\n<li>1 tbsp raisins<\/li>\n\n\n\n<li>100 g whole walnuts<\/li>\n\n\n\n<li>50 g pine nuts<\/li>\n\n\n\n<li>50 ml rum<\/li>\n\n\n\n<li>1 \u00bd tsp cinnamon<\/li>\n\n\n\n<li>1 pinch of cardamom, ground<\/li>\n\n\n\n<li>1 pinch of nutmeg<\/li>\n\n\n\n<li>1 pinch of cloves, ground<\/li>\n\n\n\n<li>1 tbsp orange zest<\/li>\n\n\n\n<li>110 g beet syrup<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the yeast dough:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>125 ml lukewarm milk<\/li>\n\n\n\n<li>10 g yeast<\/li>\n\n\n\n<li>30 ml rapeseed oil<\/li>\n\n\n\n<li>1 egg (size M)<\/li>\n\n\n\n<li>1 sachet vanilla sugar<\/li>\n\n\n\n<li>1 pinch of salt<\/li>\n\n\n\n<li>250 g wheat flour type 550<br><br><\/li>\n\n\n\n<li>Walnuts for the decoration<\/li>\n\n\n\n<li>1 egg yolk and 2 tbsp milk to coat<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Make the filling the evening before:<br><\/strong>To do this, boil the dried pears in a little water for approx. 10-15 minutes until soft. Leave to cool and cut into small pieces. Remove the core if necessary.<\/p>\n\n\n\n<p><br>Chop the figs and apricots into small pieces too. Mix all the ingredients for the filling in a large bowl, cover and leave to marinate overnight at room temperature.<br><\/p>\n\n\n\n<p><br><strong>Make the yeast dough the next day:<br><\/strong>Pour the milk into the mixing bowl of the food processor. Crumble the yeast over it, leave to stand briefly and dissolve in the milk. Add the rapeseed oil, egg, vanilla sugar, salt and flour.<br><br>Knead into a smooth, supple dough using the dough hook.<br>Now add the filling and knead it into the dough in the bowl with your hands.<br><br>With wet hands, take the dough out of the bowl in three parts and form small loaves on the baking tray.<br>(Alternatively, you can fill a plastic mold with the dough and then turn the loaves out onto the tray).<br><br>Leave the fruit loaves to rest for 30 minutes.<br><br>During this time, heat the Merklinger to approx. 200-220\u00b0C (BOBBY approx. 180-200\u00b0C).<br><br>Prick the loaves several times with a wooden skewer before baking. Mix the egg yolk with the milk and brush the bread with it.
