{"id":37963,"date":"2024-11-29T07:39:17","date_gmt":"2024-11-29T06:39:17","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=37963"},"modified":"2024-11-29T07:40:01","modified_gmt":"2024-11-29T06:40:01","slug":"chocolate-walnut-cantuccini-2","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/schoko-walnuss-cantuccini-2\/","title":{"rendered":"Chocolate and walnut cantuccini"},"content":{"rendered":"<p><strong><strong>You will need:<\/strong>\u00a0Firebricks\/spacer grate<\/strong><br><strong><strong>Working hours:<\/strong>  20 minutes<\/strong><br><strong><strong>Baking time:<\/strong> approx. 20 minutes + 5-8 minutes roasting time<br><br><strong><strong>Preheating:\u00a0<\/strong>approx. 30 minutes<br>Top heat:\u00a0<\/strong>approx. 220-250\u00b0C<br><strong>Fireclay brick: approx. 160-180\u00b0C<\/strong><\/strong><br><br><strong>In the BOBBY:<br><strong><strong>Preheating:\u00a0<\/strong>approx. 10-15 minutes<br>Top heat:\u00a0<\/strong>approx. 200-220\u00b0C<br><strong>Fireclay brick: approx. 140-160\u00b0C<\/strong><\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> (for approx. 50 pieces)<br><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g wheat flour type 405<\/li>\n\n\n\n<li>150 g sugar<\/li>\n\n\n\n<li>1 pinch of salt<\/li>\n\n\n\n<li>1 teaspoon baking powder<\/li>\n\n\n\n<li>2 tsp gingerbread spice (e.g. Grandma's gingerbread spice from F\u00f6hr Genussmanufaktur)<\/li>\n\n\n\n<li>30 g soft butter<\/li>\n\n\n\n<li>2 eggs (size M)<\/li>\n\n\n\n<li>10 ml Arancello or Grand Marnier<\/li>\n\n\n\n<li>Zest from an untreated orange<\/li>\n\n\n\n<li>70 g walnuts<\/li>\n\n\n\n<li>70 g chocolate drops<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 egg yolk<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Knead the flour, sugar, salt, baking powder, gingerbread spice, butter, eggs and Arancello into a smooth dough. Knead the orange zest, walnuts and chocolate drops into the dough and shape into a flat cake.<br><br>Wrap the dough in cling film and chill for 1 hour.<br><br>Then divide into 2 equal pieces and shape them into long rolls with a diameter of approx. 3 cm on a lightly floured work surface.<br><br>During this time, heat the Merklinger to approx. 220-250\u00b0C (BOBBY approx. 200-220\u00b0C).<br><br>Line a baking tray with a baking mat.<br><br>Place the dough rolls on the tray with a little space between them. Whisk the egg yolk and brush the rolls with it. Place the tray on the spacer rack on the fireclay bricks in the hot Merklinger. Pre-bake the dough rolls for approx. 20 minutes.<br><br>Remove from the Merklinger and leave to cool on the tray. Then cut diagonally into approx. 1 cm thick slices with a serrated knife.<br><br>Now place the cantuccini directly on the firebricks with the cut surface facing upwards (temperature of the firebricks: 140-160\u00b0C) and bake for another 5-8 minutes until light brown. Turn the cookies once during this time.<br><br>Remove the cantuccini from the Merklinger and leave to cool thoroughly on a wire rack.
