{"id":37734,"date":"2024-11-13T11:04:29","date_gmt":"2024-11-13T10:04:29","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=37734"},"modified":"2024-11-29T08:54:55","modified_gmt":"2024-11-29T07:54:55","slug":"irish-guinness-stew","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/irish-guinness-stew\/","title":{"rendered":"Irish Guinness Stew"},"content":{"rendered":"<p><strong>You will need:<\/strong>\u00a0Fireclay bricks \/ <a href=\"https:\/\/www.dermerklinger.de\/en\/product\/spacer-grid\/\" data-type=\"product\" data-id=\"673\">Spacer grid<\/a> \/ <a href=\"https:\/\/www.dermerklinger.de\/en\/product\/extendable-grill-grate\/\" data-type=\"product\" data-id=\"668\">Extendable grill grate<\/a><br><strong>Working hours:<\/strong> 30 minutes<br><strong>Cooking time:<\/strong> approx. 90-120 minutes<br><br><strong>Preheating:\u00a0<\/strong>approx. 30 minutes<br><strong>Top heat:\u00a0<\/strong>approx. 200-220\u00b0C<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>Ingredients<\/strong><br><\/strong>(for 6-8 persons)<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg lamb or beef goulash<\/li>\n\n\n\n<li>2 tablespoons clarified butter<\/li>\n\n\n\n<li>400 g potatoes, diced<\/li>\n\n\n\n<li>3 onions, roughly diced<\/li>\n\n\n\n<li>2 cloves of garlic, finely chopped<\/li>\n\n\n\n<li>2 tbsp tomato puree<\/li>\n\n\n\n<li>1 tbsp flour<\/li>\n\n\n\n<li>1-2 bottles of \"Guinness Extra Stout\" (330 ml)<\/li>\n\n\n\n<li>400 ml lamb or beef stock<\/li>\n\n\n\n<li>1 bay leaf<\/li>\n\n\n\n<li>1 teaspoon thyme<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p>Heat the Merklinger to approx. 200-220\u00b0C.<br><br>Meanwhile, place a large cast-iron pot on the firebricks to heat up.<br><br>Heat the clarified butter in the pan directly over the fire on the pull-out grill rack and sear the meat cubes in batches on all sides.<br>Season with salt and pepper and remove with a slotted spoon.<br><br>Add the potatoes, onions and garlic to the pan, saut\u00e9 and season with salt and pepper.<\/p>\n\n\n\n<p>Stir in the tomato pur\u00e9e and fry briefly. Sprinkle over the flour and saut\u00e9.<br><\/p>\n\n\n\n<p>Deglaze with the Guinness beer, bring to the boil and simmer for a few minutes.<br><br>Then return the meat to the pot.<br><br>Stir in the hot stock.
