{"id":36700,"date":"2024-06-13T08:20:54","date_gmt":"2024-06-13T06:20:54","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=36700"},"modified":"2024-07-02T09:10:20","modified_gmt":"2024-07-02T07:10:20","slug":"chicken-drumsticks","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/haehnchen-drumsticks\/","title":{"rendered":"Chicken drumsticks"},"content":{"rendered":"<p><strong>You will need:<\/strong> Fireclay bricks \/ <a href=\"https:\/\/www.dermerklinger.de\/en\/product\/celtic-bowl\/\" data-type=\"product\" data-id=\"32556\">Celtic bowl<\/a> <br><strong>Working hours: <\/strong>15 minutes<br><strong>Barbecue time: <\/strong>ca<strong>.<\/strong> 45-50 minutes<br><br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Top heat: <\/strong> approx. 220-250\u00b0C \/ approx. 280-300\u00b0C<br><br><br><strong>In the BOBBY:<br>Preheating:<\/strong> approx. 10-15 minutes<br><strong>Top heat: <\/strong> approx. 200-230\u00b0C \/ approx. 250-280\u00b0C<br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1-1.2 kg chicken drumsticks (approx. 10 pieces)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the Rub:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>20 g coarse sea salt<\/li>\n\n\n\n<li>10 black peppercorns<\/li>\n\n\n\n<li>1 teaspoon brown sugar<\/li>\n\n\n\n<li>\u00bd tsp chili flakes<\/li>\n\n\n\n<li>1 tbsp sweet paprika powder<\/li>\n\n\n\n<li>1 tsp curry<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the glaze:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3-4 tbsp maple syrup<\/li>\n\n\n\n<li>3-4 tbsp BBQ sauce, e.g. whisky BBQ sauce (recipe: Der Merklinger -) <a href=\"https:\/\/www.dermerklinger.de\/en\/recipe\/skewers\/\" data-type=\"rezept\" data-id=\"31502\">Layered skewers<\/a>)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>In addition:<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tbsp cooking oil<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><br><\/p>\n\n\n\n<p>Pat the chicken drumsticks dry with kitchen paper.<br><strong><br>For the Rub:<br><\/strong>Finely crush the sea salt, pepper, sugar and chili flakes. Mix with the paprika powder and curry in a small bowl.<br><br>Rub the drumsticks thoroughly with the spice mixture and place in the fridge for at least an hour (or overnight).<br><br>Heat the Merklinger to approx. 220-250\u00b0C (BOBBY: approx. 200-230\u00b0C).<br><br>Brush the Celtic bowl with oil and place the drumsticks on top.<br><br>Place in the hot Merklinger directly on the firebricks and grill indirectly for approx. 30 minutes until a core temperature of 70-75\u00b0C is reached.<br><br>Turn the chicken legs once after 15 minutes.<br><br>For the glaze, mix the maple syrup and BBQ sauce in a jar or small bowl.<br><br>Remove the dish from the oven and dip the drumsticks into the glaze or brush all over with it.<br>Increase the temperature in the Merklinger to approx. 280-300\u00b0C (BOBBY: approx. 250-280\u00b0C). To do this, add another 2-3 logs to the back.<br><br>Grill the chicken drumsticks for a further 15-20 minutes (until the core temperature reaches 80-85\u00b0C) until the glaze is nicely caramelized.
