{"id":34368,"date":"2024-02-28T17:45:17","date_gmt":"2024-02-28T16:45:17","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=34368"},"modified":"2024-07-02T08:54:32","modified_gmt":"2024-07-02T06:54:32","slug":"schwarzwaelderkirsch-buchteln-with-kirschwass-cream","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/schwarzwaelderkirsch-buchteln-mit-kirschwassersahne\/","title":{"rendered":"Black Forest cherry buns with kirsch cream"},"content":{"rendered":"<p><strong>You will need:<\/strong> Fireclay bricks \/ <a href=\"https:\/\/www.dermerklinger.de\/en\/product\/spacer-grid\/\" data-type=\"product\" data-id=\"673\">Spacer grid<\/a><br><strong>Working hours: <\/strong>30 minutes<br><strong>Baking time: <\/strong>ca<strong>.<\/strong> 35-40 minutes<br><br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Top heat: <\/strong> approx. 200-220\u00b0C<br><br><strong>In the BOBBY:<br>Preheating: <\/strong>approx. 10 minutes<br><strong>Top heat: <\/strong> approx. 180-200\u00b0C<br><br><br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> (for 15 pieces)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the black forest cherry buns:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g wheat flour type 550&nbsp;<\/li>\n\n\n\n<li>40 g baking cocoa<\/li>\n\n\n\n<li>150 g sugar<\/li>\n\n\n\n<li>1 sachet vanilla sugar<\/li>\n\n\n\n<li>100 g grated chocolate (dark)<\/li>\n\n\n\n<li>1 pinch of salt<\/li>\n\n\n\n<li>250 ml lukewarm milk<\/li>\n\n\n\n<li>1 cube of yeast (room temperature)<\/li>\n\n\n\n<li>1 egg (size M)&nbsp;<\/li>\n\n\n\n<li>50 g soft butter<\/li>\n\n\n\n<li>1 jar of sour cherries (350 g)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the kirsch cream<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200 ml cream<\/li>\n\n\n\n<li>1 tbsp powdered sugar<\/li>\n\n\n\n<li>1 \u00bd tsp cherry brandy (to taste)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100 g butter<\/li>\n\n\n\n<li>Powdered sugar<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the black forest cherry buns:<\/strong><\/p>\n\n\n\n<p>Mix the flour, cocoa powder, sugar, vanilla sugar, grated chocolate and salt in a bowl.<br><br>Pour the milk into the mixing bowl of the food processor. Crumble the yeast on top and dissolve in the lukewarm milk.<br><br>Add the flour mixture, egg and butter and knead everything into a medium-strength yeast dough.<br><br>Cover and leave to rise in a warm place for approx. 1 hour until the dough has doubled in volume.<br><br>Drain the cherries well in a sieve. Collect the juice (see tip).<br><br>Melt 80 g butter in a casserole dish or roasting tin.<br><br>Place the dough on a lightly floured work surface, divide into 15 equal pieces (75 g each) and roll into balls. Press them flat, place 3-4 cherries in the middle and press the edges of the dough well together over the cherries.<br><br>Turn the Buchteln in the melted butter and place in the tin. Leave to rise for a further 30-45 minutes.<br><br>Heat the Merklinger to approx. 200-220\u00b0C (BOBBY: 180-200\u00b0C).<br><br>Bake in the hot Merklinger on the spacer rack on the firebricks for approx. 35-40 minutes.<br><br>Melt the remaining butter and brush the hot buns with it.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><br><br><strong>For the kirsch cream:<\/strong><\/p>\n\n\n\n<p>Pour the cream into a mixing bowl and place in the freezer for approx. 20 minutes before whipping.<br><br>Whip the cream until stiff. Finally, add the powdered sugar and kirsch and beat in briefly.<br><br>Dust the black forest cherry buns with powdered sugar and serve with the kirsch cream.<\/p>\n\n\n\n<p><br><br><strong>Tip:<\/strong><br>You can quickly make a suitable syrup from the collected cherry juice.<br><br>Pour the juice and sugar (in a 1:1 ratio) into a medium saucepan and heat while stirring until the sugar has completely dissolved.
