{"id":32189,"date":"2023-09-26T08:09:02","date_gmt":"2023-09-26T06:09:02","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=32189"},"modified":"2023-09-26T08:09:04","modified_gmt":"2023-09-26T06:09:04","slug":"butternut-squash-with-spelt-mushroom-filling-and-grilled-radicchio","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/butternut-kuerbis-mit-dinkel-pilz-fuellung-und-gegrilltem-radicchio\/","title":{"rendered":"Butternut squash with spelt and mushroom filling and grilled radicchio"},"content":{"rendered":"<p><strong>You will need:<\/strong>\u00a0Fireclay bricks\/<a href=\"https:\/\/www.dermerklinger.de\/en\/product\/spacer-grid\/\" data-type=\"product\" data-id=\"673\">Spacer grid<\/a>\/<a href=\"https:\/\/www.dermerklinger.de\/en\/product\/extendable-grill-grate\/\" data-type=\"product\" data-id=\"668\">Grill grate<\/a> <br><strong>Top heat:\u00a0<\/strong>approx. 220-250\u00b0C<br><strong>Preheating:\u00a0<\/strong>approx. 30 minutes<br><strong>Working hours:\u00a0<\/strong>40 minutes<br><strong>Cooking time:<\/strong> approx. 1 1\/2 hours<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong>:<\/p>\n\n\n\n<p><br>(for 4 persons)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 butternut squash (approx. 1.5 kg)<\/li>\n\n\n\n<li>1 teaspoon thyme<\/li>\n\n\n\n<li>1 clove of garlic, finely chopped<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the filling:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200 g spelt (quick-cooking)<\/li>\n\n\n\n<li>2 cloves of garlic, finely chopped<\/li>\n\n\n\n<li>\u00bd bunch parsley, chopped<\/li>\n\n\n\n<li>2 spring onions, sliced into rings<\/li>\n\n\n\n<li>10 mushrooms, sliced<\/li>\n\n\n\n<li>1 small head of radicchio<\/li>\n\n\n\n<li>1 tsp balsamic vinegar<\/li>\n\n\n\n<li>1 tsp honey<\/li>\n\n\n\n<li>2-3 tbsp Parmesan cheese, grated<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp walnuts, roughly chopped<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n\n\n\n<li>Olive oil<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Heat the Merklinger to approx. 220-250\u00b0C.<br><br>Cook the spelt according to the packet instructions. (You can also do this the day before).<br><br>Cut the pumpkin in half lengthways and remove the seeds with a spoon. Place the pumpkin halves in a baking dish with the inside facing upwards and season with salt and pepper. Mix the garlic with the thyme and 1 tbsp olive oil in a small bowl and brush the cut surfaces with the mixture. Place the baking dish on the wire rack on the firebricks and pre-cook the pumpkin for approx. 60 minutes.<br><br>Meanwhile, toast the chopped walnuts, without adding any fat, in a fireproof pan directly over the fire on the pull-out grill rack. Set aside.<br><br>Wash the radicchio, remove the outer leaves and cut in half lengthways.<br>First place them cut-side down on the grill for approx. 2 minutes. Then salt the cut surfaces and brush with a mixture of 2 tbsp olive oil, balsamic vinegar and honey.<br><br>Place on the grill for a few more minutes with the cut surfaces facing upwards.<br><br>Cut the grilled radicchio into strips.<\/p>\n\n\n\n<p>Heat 2 tablespoons of olive oil in an ovenproof pan on the pull-out grill rack and saut\u00e9 the garlic and parsley in it.<br><br>Add the spring onions and mushrooms and saut\u00e9. Season with salt and pepper and stir in the spelt, radicchio and parmesan.<br><br>As soon as the pumpkin halves have softened a little, remove them from the Merklinger and scoop out the flesh with a spoon. Leave a 1 cm wide edge. Dice the flesh and mix into the filling.
