{"id":31766,"date":"2023-09-07T15:05:26","date_gmt":"2023-09-07T13:05:26","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=31766"},"modified":"2023-09-07T15:05:28","modified_gmt":"2023-09-07T13:05:28","slug":"berries-mascarpone-roll","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/beeren-mascarpone-rolle\/","title":{"rendered":"Berry and mascarpone roll"},"content":{"rendered":"<p><strong>You will need:<\/strong>&nbsp;Firebricks\/spacer grate<br><strong>Top heat:&nbsp;<\/strong>approx. 220-250\u00b0C<br><strong>Preheating:&nbsp;<\/strong>approx. 30 minutes<br><strong>Working hours:<\/strong>  20 minutes<br><strong>Baking time:<\/strong> approx. 30 minutes<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>Ingredients<\/strong><\/strong><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the quark and oil batter:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 g wheat flour type 405 or type 550<\/li>\n\n\n\n<li>2 tsp baking powder<\/li>\n\n\n\n<li>1 pinch of salt<\/li>\n\n\n\n<li>50 g sugar<\/li>\n\n\n\n<li>150 g low-fat quark<\/li>\n\n\n\n<li>75 ml neutral cooking oil<\/li>\n\n\n\n<li>approx. 75 ml milk<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the mascarpone filling:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 g mascarpone<\/li>\n\n\n\n<li>100 g low-fat quark<\/li>\n\n\n\n<li>4 tablespoons sugar<\/li>\n\n\n\n<li>1 sachet vanilla custard powder<\/li>\n\n\n\n<li>Zest of 1 untreated lemon<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Butter for the tray<\/li>\n\n\n\n<li>250 g mixed berries (e.g. currants, blueberries, raspberries, blackberries)<\/li>\n\n\n\n<li>1 egg + 2 tbsp milk<\/li>\n\n\n\n<li>2 tbsp pistachios, chopped<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p>Heat the Merklinger to approx. 220-250\u00b0C.<\/p>\n\n\n\n<p><br>Grease a baking tray with butter.<\/p>\n\n\n\n<p><br><strong><br>For the mascarpone filling:<\/strong><\/p>\n\n\n\n<p>Place all the ingredients in a bowl and mix with a whisk until smooth.<\/p>\n\n\n\n<p><br><strong><br>For the quark and oil batter:<br><\/strong>Mix the flour, baking powder, salt and sugar in a mixing bowl.<br>Add the drained quark, oil and milk and knead briefly with the dough hook of the food processor to form a smooth, medium-firm dough. (Add a little more milk if necessary).<br><br>Place the dough on the work surface and knead again briefly with your hands. Roll out into a rectangle (approx. 30 x 40 cm) on a lightly floured work surface using a rolling pin.<br><br>Spread the mascarpone filling on top. Leave a few centimeters away from the edge. Spread the washed berries on top.
