{"id":31188,"date":"2023-06-22T09:09:13","date_gmt":"2023-06-22T07:09:13","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=31188"},"modified":"2023-06-22T09:09:15","modified_gmt":"2023-06-22T07:09:15","slug":"grilled-vegetables-panzanella","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/grillgemuese-panzanella\/","title":{"rendered":"Grilled vegetables Panzanella"},"content":{"rendered":"<p><strong>You will need:<\/strong>\u00a0Fireclay stones<br><strong>Top heat:\u00a0<\/strong>approx. 220-250\u00b0C<br><strong>Preheating:\u00a0<\/strong>approx. 30 minutes<br><strong>Working hours:<\/strong>  20 minutes<br><strong>Cooking time:<\/strong> approx. 20-25 minutes<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>Ingredients<\/strong><br><\/strong>(for 4 persons)<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250-300 g stale white bread, diced<\/li>\n\n\n\n<li>250 g diced eggplants<\/li>\n\n\n\n<li>200 g zucchini, diced<\/li>\n\n\n\n<li>150 g olives<\/li>\n\n\n\n<li>1-2 garlic cloves, sliced<\/li>\n\n\n\n<li>1 red onion, cut into half rings<\/li>\n\n\n\n<li>some finely chopped red chili, to taste<\/li>\n\n\n\n<li>1 untreated lemon, sliced<\/li>\n\n\n\n<li>sprigs of thyme<\/li>\n\n\n\n<li>2 tbsp capers<\/li>\n\n\n\n<li>150 g plum tomatoes, halved<\/li>\n\n\n\n<li>a handful of fresh basil leaves<\/li>\n\n\n\n<li>Salt flakes, pepper from the mill<\/li>\n\n\n\n<li>white balsamic vinegar, to taste<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Good olive oil<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Heat the Merklinger to approx. 220-250\u00b0C.<br><br>Mix the bread cubes with 2 tablespoons of olive oil and place in an ovenproof dish.\u00a0<br><br>Mix the eggplants, zucchinis, olives, garlic and onion (chilli to taste) with 50 ml olive oil and spread in an oven dish.<br>Top with lemon slices and sprigs of thyme.<br><br>Place both directly on the firebricks in the hot Merklinger. Toast the bread cubes for approx. 15 minutes until golden brown. Roast the vegetables for 20-25 minutes.<br>Then mix everything together with the capers and plum tomatoes in a large bowl.<br><br>Finally, season with salt flakes and freshly ground pepper. If necessary, mix in a little olive oil and white balsamic vinegar to taste.<br><br>Garnish with basil leaves.<br><br><\/p>\n\n\n\n<p><strong>Tip:<br><\/strong>This delicious Mediterranean bread salad is perfect for using up stale bread.
