{"id":30510,"date":"2023-04-27T10:31:40","date_gmt":"2023-04-27T08:31:40","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=30510"},"modified":"2023-04-27T10:42:01","modified_gmt":"2023-04-27T08:42:01","slug":"pollo-fino-with-spaghetti-al-forno","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/pollo-fino-mit-spaghetti-al-forno\/","title":{"rendered":"Pollo fino with spaghetti al forno"},"content":{"rendered":"<p><strong>You will need:<\/strong>&nbsp;Firebricks\/spacer grate<br><strong>Top heat:&nbsp;<\/strong>approx. 200-220\u00b0C<br><strong>Preheating:&nbsp;<\/strong>approx. 30 minutes<br><strong>Working hours:<\/strong>  40 minutes<br><strong>Cooking time:<\/strong> approx. 45-50 minutes<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>Ingredients<\/strong><br><\/strong>(for 8 people)<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the Pollo fino:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12 chicken thighs (with skin, \"Pollo fino\")<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n\n\n\n<li>3 tsp paprika powder<\/li>\n\n\n\n<li>1 pinch of chili powder<\/li>\n\n\n\n<li>12 medium-sized sage leaves, finely chopped<\/li>\n\n\n\n<li>4 tbsp olive oil<br><\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the spaghetti al forno:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400 g spaghetti<\/li>\n\n\n\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>1 onion, finely chopped<\/li>\n\n\n\n<li>1-2 cloves of garlic, finely chopped<\/li>\n\n\n\n<li>1 tbsp tomato puree<\/li>\n\n\n\n<li>\u00bd tsp sugar<\/li>\n\n\n\n<li>50 ml vodka<\/li>\n\n\n\n<li>400 g chunky tomatoes from the tin<\/li>\n\n\n\n<li>100 ml cream<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n\n\n\n<li>Basil, chopped<\/li>\n\n\n\n<li>200 g mozzarella, grated or diced<br><br><\/li>\n<\/ul>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>a little olive oil<br><br><\/li>\n<\/ul>\n\n\n\n<p><strong>For the Pollo fino :<\/strong><br>Pat the chicken thighs dry. Rub well with salt, pepper and paprika powder. Mix the chopped sage leaves into the olive oil and brush the chicken pieces with it.<br><br>Marinate for at least 60 minutes.<br><br>Heat the Merklinger to approx. 200-220\u00b0C.<br><br>Spread the chicken pieces on the rack of a roasting tin and place in the hot Merklinger. Bake for a total of approx. 45-50 minutes. For a crispy skin, add 2-3 more logs in the last 15 minutes and increase the top heat to approx. 300-320\u00b0C.<br><br><strong>For the spaghetti al forno :<\/strong><br>Heat the oil in a pan. Stir-fry the onion and garlic for approx. 5 minutes. Stir in the tomato pur\u00e9e and sugar and saut\u00e9. Deglaze with vodka and simmer for a few minutes. Stir in the tomatoes and bring to the boil briefly. Season the sauce with salt and pepper and simmer gently for 15-20 minutes.<\/p>\n\n\n\n<p><br>Cook the spaghetti during this time. They should still be nice and al dente. It is best to drain 1-2 minutes before the specified cooking time and rinse with cold water.<br><br>Stir the cream into the tomato sauce, bring to the boil again briefly and season with salt and pepper.<br><br>Mix the tomato sauce and basil into the spaghetti. Brush an oven dish or baking tray with olive oil.
