{"id":27121,"date":"2023-02-21T13:46:20","date_gmt":"2023-02-21T12:46:20","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=27121"},"modified":"2023-02-21T13:46:23","modified_gmt":"2023-02-21T12:46:23","slug":"fish-soup-with-pizza-bread-lid","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/fischsuppe-mit-pizzabrotdeckel\/","title":{"rendered":"Fish soup with pizza bread lid"},"content":{"rendered":"<p><strong>You will need:<\/strong>&nbsp;Fireclay bricks\/extendable grill grate<br><strong>Top heat:&nbsp;<\/strong>approx. 220-250\u00b0C\/250-280\u00b0C<br><strong>Preheating:&nbsp;<\/strong>approx. 15 minutes<br><strong>Working hours:<\/strong>  45 minutes<br><strong>Cooking time\/baking time:<\/strong> approx. 40 minutes<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>Ingredients<\/strong><br><\/strong>(for 4 persons)<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the pizza bread lid:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>approx. 300 g pizza dough, for a pan size of 26 cm \u00d8<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the herb oil:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 tbsp olive oil<\/li><li>1 clove of garlic, finely chopped<\/li><li>1 tbsp parsley, finely chopped<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the fish soup:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500 g fish fillets (e.g. char, trout, carp, pike)<\/li><li>2 tablespoons frying oil<\/li><li>1\/2 onion, finely diced<\/li><li>1 clove of garlic, finely chopped<\/li><li>some fresh chili, finely chopped<\/li><li>70 g leek, cut into half rings<\/li><li>70 g carrots, diced<\/li><li>70 g parsley root, diced<\/li><li>70 g celeriac, diced<\/li><li>250 ml dry white wine<\/li><li>500 ml fish stock<\/li><li>1 bay leaf<\/li><li>\u00bd untreated lemon, zest and juice<\/li><li>250 g tomatoes<\/li><li>250 ml cream<\/li><li>2 tbsp parsley, finely chopped<\/li><li>Salt, pepper<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Sea salt flakes<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the herb oil:<br><\/strong>Mix the oil, garlic and parsley in a small bowl.<br><br><strong>For the fish soup:<br><\/strong>Heat the Merklinger to approx. 220-250\u00b0C.<br>Meanwhile, place a heavy, cast-iron pot on the firebricks to heat up.<br>Heat the oil in the pan directly over the fire on the pull-out grill rack and saut\u00e9 the onions, garlic, chili and root vegetables.<br><br>Deglaze with white wine and simmer for a few minutes. Pour in the fish stock, add the bay leaf and simmer gently for about 20 minutes.<br><br>During this time, prepare the fish and tomatoes. Remove the skin from the fish fillets, cut into 3 cm pieces and sprinkle with lemon juice.<br><br>Halve the tomatoes, remove the seeds and cut out the stalk. Finely dice the flesh.<br><br>Remove the pan from the Merklinger and finely puree the stock. (Remove the bay leaf beforehand.)<br><br>Stir in the cream and lemon zest and season to taste with salt, pepper and a little lemon juice.<br>Heat the soup again on the pull-out grill over the fire.<br><br>Now increase the top heat to approx. 250-280\u00b0C. To do this, add a few logs of wood and push the fire in the combustion chamber all the way to the back.<br><br>Roll out the pizza dough on a lightly floured work surface slightly larger than the diameter of the pan.<\/p>\n\n\n\n<p><br>Place the fish, tomatoes and parsley in the pan.
