{"id":26610,"date":"2023-01-26T14:59:09","date_gmt":"2023-01-26T13:59:09","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=26610"},"modified":"2023-03-21T01:03:03","modified_gmt":"2023-03-21T00:03:03","slug":"cheese-dumplings-from-the-hot-plate","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/kaspressknoedel-von-der-feuerplatte\/","title":{"rendered":"Cheese dumplings from the hot plate"},"content":{"rendered":"<p><strong><strong>You will need:<\/strong>&nbsp;<\/strong>Firebricks\/fire plate<strong><br><strong>Top heat:&nbsp;<\/strong><\/strong>approx. 220-250\u00b0C<strong><br><strong>Preheat the hotplate indirectly on the firebricks:&nbsp;<\/strong><\/strong>approx. 20 minutes<strong><br><strong>Preheat the hotplate directly over the fire:&nbsp;<\/strong><\/strong>approx. 10-15 minutes<strong><br><strong>Working hours:&nbsp;<\/strong><\/strong>35 minutes<strong><br><strong>Roast:<\/strong> <\/strong>approx. 15-16 minutes<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong><br>(for 12 pieces)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g stale white bread, diced<\/li>\n\n\n\n<li>50 g clarified butter<\/li>\n\n\n\n<li>1 onion, finely chopped<\/li>\n\n\n\n<li>200 ml milk<\/li>\n\n\n\n<li>4 eggs<\/li>\n\n\n\n<li>200 g mountain cheese, finely diced<\/li>\n\n\n\n<li>3 tbsp chives rolls<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Clarified butter for the hotplate<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Heat the Merklinger to approx. 220-250\u00b0C using the hotplate.<br><br>Place the bread in a large bowl.<br><br>Heat a cast-iron pan on the hob and heat the clarified butter in it. Saut\u00e9 the onions in it and deglaze with milk.<br><br>Add the lukewarm mixture to the bread cubes. Add the eggs, cheese cubes and chives and knead everything together, preferably with your hands.<br>Season to taste with salt and pepper. Cover and leave to soak for approx. 30 minutes.<br><br>Then divide the mixture into 12 \"cake pieces\" in the bowl using the dough card. (This will make the dumplings the same size).<br>Roll into dumplings with moistened hands and press flat.<br><br>Melt some clarified butter on the hotplate.<br><br>Fry the cheese dumplings for 7-8 minutes on each side until golden brown.<br>(The temperature on the hotplate should be approx. 160-180\u00b0C).<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Tip:<\/strong><br>Kaspresskn\u00f6del are a wonderful addition to soups. They also make a hearty meal with sauerkraut or a crisp salad. There's hardly a better way to use up stale bread!<\/p>\n\n\n\n<p><strong>Tip:<\/strong><br>Kaspresskn\u00f6del are excellent for freezing after frying. Once cooled, place in freezer bags or suitable containers.
