{"id":26363,"date":"2023-01-13T09:45:07","date_gmt":"2023-01-13T08:45:07","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=26363"},"modified":"2023-02-21T13:29:18","modified_gmt":"2023-02-21T12:29:18","slug":"fire-pot-with-grilled-trout-fillets","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/feuertopf-mit-gegrillten-forellenfilets\/","title":{"rendered":"Fire pot with grilled trout fillets"},"content":{"rendered":"<p><strong>You will need:<\/strong>\u00a0Fireclay bricks\/extendable grill grate<br><strong>Top heat:\u00a0<\/strong>approx. 220-250\u00b0C<br><strong>Preheating:\u00a0<\/strong>approx. 15 minutes<br><strong>Working hours:\u00a0<\/strong>30 minutes<br><strong>Cooking time:<\/strong> approx. 20 minutes<br><strong>Barbecue:<\/strong> approx. 3 minutes<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong><br>(for 4 persons)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the marinade:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 tablespoons lemon juice<\/li><li>6 tablespoons olive oil<\/li><li>2 cloves of garlic, finely chopped<\/li><li>1 tsp rosemary, chopped<\/li><li>1 tsp thyme, chopped<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the Dutch oven:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 tbsp olive oil<\/li><li>1 onion, finely chopped<\/li><li>2 cloves of garlic, finely chopped<\/li><li>5 medium-sized potatoes, diced<\/li><li>1 red bell pepper, diced<\/li><li>1 red pepper, finely chopped<\/li><li>1 tbsp tomato puree<\/li><li>\u00bc l white wine<\/li><li>400 ml fish stock<\/li><li>4 cl white port wine<\/li><li>200 g strained tomatoes<\/li><li>1 bay leaf<\/li><li>\u00bd tsp fresh thyme leaves<\/li><li>Salt, pepper<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>fresh sprigs of thyme<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Rinse the gutted trout thoroughly under cold water, pat dry and fillet. Mix the lemon juice, olive oil, garlic and herbs and marinate the trout fillets for about 2 hours.&nbsp;<\/p>\n\n\n\n<p>During this time, heat the Merklinger to approx. 220-250\u00b0C.<\/p>\n\n\n\n<p>Heat the olive oil in a fireproof pan on the pull-out grill rack directly over the fire. Saut\u00e9 the onions, garlic, potatoes, peppers and pepper. Season with salt and pepper. Stir in the tomato pur\u00e9e and saut\u00e9 briefly.<br><br>Pour in the white wine, fish stock and port. Stir in the strained tomatoes. Add the bay leaf and thyme leaves and simmer for about 20 minutes.&nbsp;<\/p>\n\n\n\n<p>Shortly before the end of the cooking time, remove the fish fillets from the marinade. Drain and season with salt on the flesh side.<br><br>Grill the fillets on the skin side for approx. 3 minutes.<br><br>(You can place the pot on the firebricks during this time).<\/p>\n\n\n\n<p><br>Serve the \"fire pot\" in soup bowls. Arrange the grilled trout fillets on top.
