{"id":23959,"date":"2022-07-22T08:53:04","date_gmt":"2022-07-22T06:53:04","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=23959"},"modified":"2022-07-22T08:53:06","modified_gmt":"2022-07-22T06:53:06","slug":"pesto-rosso-flatbread","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/pesto-rosso-fladen\/","title":{"rendered":"Pesto rosso flatbread"},"content":{"rendered":"<p><strong>You will need:<\/strong> Fireclay stones<br><strong>Fireclay brick: <\/strong> approx. 160-180\u00b0C<br><strong>Top heat: <\/strong> approx. 250-300\u00b0C<br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Working hours: <\/strong>20 minutes<br><strong>Baking: <\/strong>ca<strong>.<\/strong> 15 minutes<br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> (for 10-12 pieces)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the topping<\/strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g mozzarella<\/li><li>5-6 cherry tomatoes<\/li><li>10-12 pickled anchovy fillets<\/li><li>30 g Parmesan, grated<\/li><li>a little olive oil<\/li><li>sprigs of thyme<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><strong>For the dough<\/strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>400 g wheat flour type 550 or type 405<\/li><li>1 sachet baking powder<\/li><li>200 g ricotta<\/li><li>1 teaspoon salt<\/li><li>80 g pesto rosso<\/li><li>60 ml olive oil<\/li><li>50 ml dry white wine<\/li><li>50 ml water<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Heat the Merklinger to approx. 250-300\u00b0C.<br><br>Drain the mozzarella and cut into slices. Wash and halve the tomatoes. Pat the anchovies dry.<br><br><strong>For the dough:<\/strong><\/p>\n\n\n\n<p>Mix the flour with the baking powder in a mixing bowl. Add the remaining ingredients and knead quickly with a hand mixer or food processor (dough hook) briefly on the lowest setting, then on the highest setting to form a smooth, medium-stiff dough.<br><br>Place the dough on a lightly floured work surface, divide into 10-12 equal pieces and shape each into a round flatbread.<br><br>Top each flatbread with a slice of mozzarella, an anchovy fillet and half a cherry tomato.
