{"id":23012,"date":"2022-06-03T08:24:04","date_gmt":"2022-06-03T06:24:04","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=23012"},"modified":"2024-04-24T10:28:41","modified_gmt":"2024-04-24T08:28:41","slug":"lasagne-with-grilled-radicchio","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/lasagne-mit-gegrilltem-radicchio\/","title":{"rendered":"Lasagne with grilled radicchio"},"content":{"rendered":"<p><strong>You will need:<\/strong>&nbsp;Firebricks\/spacer grate\/grill grate<br><strong>Top heat:&nbsp;<\/strong>approx. 220-250\u00b0C<br><strong>Preheating:&nbsp;<\/strong>approx. 30 minutes<br><strong>Working hours:&nbsp;<\/strong>45 minutes<br><strong>Cooking time:<\/strong> approx. 35-40 minutes<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong>:<\/p>\n\n\n\n<p><br>(for 6-8 persons)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>approx. 700 g radicchio<\/li><li>50 ml cooking oil<\/li><li>1 tbsp lemon juice<\/li><li>70 g butter<\/li><li>3 shallots, finely diced<\/li><li>1 clove of garlic, finely chopped<\/li><li>70 g flour<\/li><li>50 ml dry white wine<\/li><li>1 l milk<\/li><li>Salt, pepper, nutmeg<\/li><li>100 g black olives, sliced<\/li><li>200 g Taleggio, diced<\/li><li>200 g Gorgonzola with mascarpone, diced<\/li><li>16 lasagne sheets (without pre-cooking)<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>some butter for the mold<\/li><li>10-12 sage leaves<\/li><li>2-3 tbsp olive oil<\/li><li>30 g pine nuts<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Heat the Merklinger to approx. 220-250\u00b0C.<br><br>Grease a baking dish with butter.<br><br>Wash the radicchio, remove the outer leaves and cut into quarters lengthwise.<br>Mix the oil and lemon juice in a small bowl and season with salt and pepper.<br>Brush the radicchio quarters with the mixture and grill them directly over the fire on the grill rack for approx. 5 minutes. Turn once.<br><br>Remove the radicchio from the Merklinger and leave to cool slightly. Now cut out the stalk, cut the radicchio into strips and mix with the olive slices in a bowl.<br><br>To make the b\u00e9chamel sauce, melt the butter in a pan and sweat the shallots and garlic until translucent. Add the flour and saut\u00e9 while stirring. Deglaze with white wine. Gradually add the milk, stirring constantly, and stir in the b\u00e9chamel sauce.<br>Simmer for approx. 5 minutes. Season to taste with salt, pepper and nutmeg.<br><br>Now layer everything in the prepared dish. First spread a fifth of the sauce in the baking dish. Now alternate layers of lasagne sheets, b\u00e9chamel sauce, a third of the radicchio and olive mixture and a quarter of the cheese cubes. Finish with a layer of sauce and cover it again with cheese.
