{"id":22642,"date":"2022-05-20T07:35:52","date_gmt":"2022-05-20T05:35:52","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=22642"},"modified":"2022-05-20T07:35:55","modified_gmt":"2022-05-20T05:35:55","slug":"brioche-burger-buns","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/brioche-burger-buns\/","title":{"rendered":"Brioche burger buns"},"content":{"rendered":"<p><strong>You will need:<\/strong> Firebricks\/spacer grate<br><strong>Top heat: <\/strong> approx. 220-250\u00b0C<br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Working hours: <\/strong>25 minutes<br><strong>Baking time: <\/strong>ca<strong>.<\/strong> 15-20 minutes<br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong>: <br>(for 16-20 pieces)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>600 ml lukewarm milk<\/li><li>30 g yeast (room temperature)<\/li><li>1 kg wheat flour type 550 or spelt flour type 630<\/li><li>90 g melted butter<\/li><li>2 eggs (size M)<\/li><li>50 g sugar<\/li><li>20 g salt<br><\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>some cooking oil<\/li><li>1 egg + 2 tbsp water<\/li><li>Sesame<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Pour the milk into a mixing bowl and dissolve the yeast in it. Add the icing ingredients and knead into a smooth dough for approx. 10 minutes.<br><br>Cover the dough and leave to rise at room temperature for approx. 60 minutes.<br><br>Brush two baking trays with oil.<br><br>Place the dough on a lightly floured work surface. Weigh out portions weighing 90 g or 110 g and roll into balls. The surface should be smooth.<br><br>Place the dough pieces on the prepared baking trays and flatten slightly.<br><br>Cover with proofing or cling film and leave to rise at room temperature for approx. 45 minutes.<br><br>Heat the Merklinger to approx. 220-250\u00b0C.<br><br>Whisk the egg and water in a small bowl, brush the buns with the mixture and sprinkle with sesame seeds.<br><br>Place the tray on the spacer rack on the firebrick and bake the buns for approx. 15-20 minutes until golden brown.<br><br>Remove the trays from the Merklinger and immediately cover the buns with a kitchen towel and leave to cool.
