{"id":21157,"date":"2022-02-25T10:04:49","date_gmt":"2022-02-25T09:04:49","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=21157"},"modified":"2022-03-03T16:56:22","modified_gmt":"2022-03-03T15:56:22","slug":"beer-steaks-with-sour-cream-and-bacon-topping-on-potato-vegetables","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/bier-steaks-mit-schmand-speck-haube-auf-kartoffel-gemuese\/","title":{"rendered":"Beer steaks with sour cream and bacon topping on potato and vegetables"},"content":{"rendered":"<p><strong>You will need:<\/strong> Firebricks\/spacer grate<br><strong>Top heat: <\/strong> approx. 180-200\u00b0C<br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Working hours: <\/strong>40 minutes<br><strong>Cooking time: <\/strong>ca<strong>.<\/strong> 60-90 minutes<br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> (for 8 people)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li>8 pork neck steaks (200 g each)<\/li><li>800 g onions<\/li><li>2 garlic cloves<\/li><li>2 tbsp marjoram<\/li><li>1 tbsp brown sugar&nbsp;<\/li><li>1 kg potatoes<\/li><li>2-3 red peppers<\/li><li>100-120 g medium hot mustard<\/li><li>300 g sour cream<\/li><li>100 g diced bacon<\/li><li>1\/2 bunch parsley, finely chopped<\/li><li>1 bottle (500 ml) of light or dark beer<br><\/li><\/ul>\n\n\n\n<div style=\"height:49px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>In addition:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Salt, pepper<\/li><li>Paprika powder<\/li><li>Caraway powder<\/li><li>Oil for the roasting pan<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Remove the meat from the fridge one hour before cooking.<br><br><br>Rub the steaks with salt, pepper and paprika powder.<br><br><br>Heat the Merklinger to approx. 180-200\u00b0C.<br><br><br>Brush a large roasting tin with oil.<br><br><br>Peel, halve and finely slice the onions. Peel and finely chop the garlic cloves. Place the onions, garlic, marjoram and sugar in a bowl. Season with salt, pepper, caraway powder and paprika powder and mix everything well with your hands.<br><br>Wash and peel the potatoes and cut into 1-2 cm cubes. Wash the peppers, remove the seeds and also cut into cubes.<br><br>Place the onions, potatoes and peppers in the roasting tin. Place the neck steaks on top and brush the top of the meat slices with mustard.<br><br>Mix the sour cream, diced bacon and parsley in a bowl and season with a little salt and pepper. Spread the sour cream mixture over the steaks and spread a little.<br><\/p>\n\n\n\n<p><br>Pour the beer down the side.<br><\/p>\n\n\n\n<p><br>Place the roasting pan on the spacer rack on the fireclay stone and cook the beer steaks to a core temperature of 70\u00b0C (pink) or 75\u00b0C (done).
