{"id":18865,"date":"2021-10-07T22:19:00","date_gmt":"2021-10-07T20:19:00","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=18865"},"modified":"2021-10-07T22:19:04","modified_gmt":"2021-10-07T20:19:04","slug":"pumpkin-wedges-with-sour-cream-dip","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/kuerbis-wedges-mit-sauerrahm-dip\/","title":{"rendered":"Pumpkin wedges with sour cream dip"},"content":{"rendered":"<p><meta charset=\"utf-8\"><strong>Ingredients<\/strong><br>(for 4 persons)<br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li>2-3 tbsp pumpkin seeds<\/li><li>1 large Hokkaido pumpkin<\/li><li>2 sprigs of rosemary<\/li><li>4 sprigs of thyme<\/li><li>1 pinch of cayenne pepper or chili<\/li><li>1 pinch of nutmeg<\/li><li>1 pinch of pepper<\/li><li>4 tbsp rapeseed oil<\/li><li>Pumpkin seed oil<\/li><li>Salt flakes<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the sour cream dip:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>200 g sour cream<\/li><li>200 g cr\u00e8me fr\u00e2iche<\/li><li>2 tsp mustard, medium hot<\/li><li>2 tbsp chives rolls<\/li><li>some lemon zest<\/li><li>1 pinch of sugar<\/li><li>Salt, pepper<\/li><\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><meta charset=\"utf-8\">Heat the Merklinger to approx. 200-250\u00b0C.<br><br>Roast the pumpkin seeds without adding any fat in an ovenproof pan on the grill.<br><br>Wash the pumpkin and cut in half. Remove the seeds with a spoon. (Put the seeds to one side.) Cut the pumpkin into 1 cm thick slices and place on a baking tray or in a large baking dish. (The pumpkin slices should not touch each other).<br><br>Wash the rosemary and thyme and shake dry. Pluck the rosemary needles and chop finely. Strip off the thyme leaves.<br><br>Mix the oil with the rosemary, thyme, cayenne pepper, nutmeg and pepper. Drizzle over the front and back of the wedges.<br><br>Place in the hot Merklinger and bake at 200-250\u00b0C for approx. 25 minutes.<br><br>For the <strong>Sour cream dip:<\/strong><br>Place the sour cream, cr\u00e8me fr\u00e2iche and mustard in a bowl and stir until creamy. Stir in the chives and season with lemon zest, sugar, salt and pepper.<br><br>Serve the pumpkin wedges with the roasted pumpkin seeds, pumpkin seed oil and salt flakes. Serve with the sour cream dip.<br><br><\/p>\n\n\n\n<p><strong><em>Tip:<\/em><\/strong><em><br>If you like, you can sprinkle the wedges with 2 tbsp panko (or breadcrumbs) before baking.&nbsp;<\/em>(Of course, this dish is then no longer gluten-free).<br><br><\/p>\n\n\n\n<p><strong><em>Tip:<\/em><\/strong><em><br>Have you ever dried pumpkin seeds?<br>The residual heat from the firebricks in your Merklinger is wonderful <meta charset=\"utf-8\"><em>for this <\/em>suitable.
