{"id":1786,"date":"2020-08-10T17:00:52","date_gmt":"2020-08-10T15:00:52","guid":{"rendered":"https:\/\/bxeinj.myraidbox.de\/?post_type=rezept&#038;p=1786"},"modified":"2024-03-26T13:57:35","modified_gmt":"2024-03-26T12:57:35","slug":"beer-crusty-bread","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/bierkrusti-brot\/","title":{"rendered":"Beer crust"},"content":{"rendered":"<p><strong>You will need:<\/strong> Fireclay stones<br><strong>Fireclay brick: <\/strong> approx. 160-180\u00b0C<br><strong>Top heat: <\/strong> approx. 300-350\u00b0C<br><strong>Preheating: <\/strong>approx. 30 minutes<br><strong>Working hours: <\/strong>20 minutes<br><strong>Baking time: <\/strong>ca<strong>.<\/strong> 60 minutes<br><br><br><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Ingredients<\/strong> <br><\/p>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>700 g wheat flour type 1050<\/li>\n\n\n\n<li>300 g rye flour type 997<\/li>\n\n\n\n<li>\u00bd cube of yeast (room temperature)<\/li>\n\n\n\n<li>20 g salt<\/li>\n\n\n\n<li>30 g dry sourdough<\/li>\n\n\n\n<li>1-2 tablespoons bread spice<\/li>\n\n\n\n<li>500 ml room temperature beer<\/li>\n\n\n\n<li>150-200 ml lukewarm water<br><\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Pour the water into the mixing bowl of the food processor. Crumble the yeast over it, leave to stand for 5 minutes and dissolve in the water. First add the beer, then the remaining ingredients and knead into a smooth dough for approx. 10 minutes using the dough hook on the food processor.&nbsp;<br><br><\/p>\n\n\n\n<p>Cover the dough and leave to rise in a bowl for approx. 3 hours.<br><br><br>Then place the dough on a lightly floured work surface and shape into a round loaf.
