{"id":13007,"date":"2021-02-12T14:19:14","date_gmt":"2021-02-12T13:19:14","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=13007"},"modified":"2021-09-01T12:52:55","modified_gmt":"2021-09-01T10:52:55","slug":"smoked-salmon-tart","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/raeucherlachs-tarte\/","title":{"rendered":"Smoked salmon tart"},"content":{"rendered":"<p><strong>Ingredients<\/strong> (for 1 tart or springform pan with a diameter of approx. 28 cm)<\/p>\n\n\n\n<p><br><strong>For the shortcrust pastry:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>200 g wheat flour type 405<\/li><li>1 msp. baking powder<\/li><li>1 pinch of salt<\/li><li>125 g cold butter in cubes<\/li><li>1 egg<\/li><li>Cold water as required<br><\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><br><strong>For the filling:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g tart red apples<\/li><li>2 tablespoons lemon juice<\/li><li>5 spring onions<\/li><li>2 tbsp breadcrumbs for the base<\/li><li>3 eggs (size M)<\/li><li>350 g sour cream<\/li><li>1 tsp horseradish<\/li><li>2 tsp medium hot mustard<\/li><li>1 tsp honey<\/li><li>Salt, pepper<\/li><li>150 g smoked salmon<\/li><li>Butter and flour for the mold<\/li><li>fresh dill for the garnish<br><br><\/li><\/ul>\n\n\n\n<p><br>For the <strong>Shortcrust pastry:<\/strong> <br>Mix the flour, baking powder and salt in a bowl. Spread the butter on top and crumble it into the flour mixture with cold hands. Add the egg, mix briefly and then knead quickly on a lightly floured work surface to form a smooth dough. Shape the dough into a flat cake, wrap in cling film and chill for at least 1 hour.<\/p>\n\n\n\n<p><br>During this time, heat the Merklinger to approx. 200\u00b0C, grease and flour a baking tin and make the filling.<\/p>\n\n\n\n<p><br>For the <strong>Filling<\/strong>: <br>Dice the apples (approx. 1 cm) and sprinkle with lemon juice. Wash and clean the spring onions and cut into fine rings. Mix the eggs, sour cream, horseradish, mustard and honey in a bowl and season well with salt and pepper. Mix in the apples and spring onions.<\/p>\n\n\n\n<p><br><strong>Preparation<\/strong>Roll out the dough into a round on a lightly floured work surface using a rolling pin. Wrap the dough loosely around the rolling pin and place in the tin. Pull up the edges and remove the excess dough with a pastry wheel. Prick the base several times with a fork and sprinkle with the breadcrumbs. Spread the filling over the base and top with the smoked salmon. Bake in the Merklinger (at approx. 200\u00b0C top heat) for approx. 35-45 minutes until golden brown.
