{"id":12227,"date":"2020-11-17T15:40:40","date_gmt":"2020-11-17T14:40:40","guid":{"rendered":"https:\/\/www.dermerklinger.de\/?post_type=rezept&#038;p=12227"},"modified":"2021-05-03T13:53:35","modified_gmt":"2021-05-03T11:53:35","slug":"apple-tart","status":"publish","type":"rezept","link":"https:\/\/www.dermerklinger.de\/en\/rezept\/apfeltarte\/","title":{"rendered":"Apple tart"},"content":{"rendered":"<p><strong>For 8 people<\/strong><\/p>\n\n\n\n<p><strong>Ingredients for the shortcrust pastry:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>150 g wheat flour type 405<\/li><li>40 g sugar <\/li><li>1 pinch of salt <\/li><li>Zest of 1\/4 lemon<\/li><li>100 g cold butter in cubes<\/li><li>1 egg yolk<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For the filling:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>5 - 6 medium-sized apples<\/li><li>70 g butter<\/li><li>70 g sugar<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Powdered sugar to garnish. Plums, pre-cooked quinces or apricots can also be used instead of apples.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>For the <strong>Dough <\/strong>Mix the flour, sugar, lemon zest and salt in a bowl. Spread the butter on top and crumble it into the flour mixture with cold hands. Add the egg yolk, mix briefly and then knead quickly on a lightly floured work surface to form a smooth dough. Shape into a flat cake and leave to rest in the fridge for at least 30 minutes, wrapped in cling film.<\/p>\n\n\n\n<p><strong>Filling<\/strong>Wash the apples, remove the core and cut into quarters.<\/p>\n\n\n\n<p><strong>Preparation<\/strong>Heat your Merklinger to about 200\u00b0C. <\/p>\n\n\n\n<p>Heat the butter and sugar for the filling in a cast iron pan (or iron skillet) with a diameter of approx. 25 cm. As soon as the sugar has melted, layer the apple quarters in the pan, skin side down.<\/p>\n\n\n\n<p>Caramelize in the Merklinger (at approx. 200\u00b0C top heat) for about 5 minutes.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"640\" height=\"360\" src=\"https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/11\/merklinger-holzbackofen-pizzaofen-grill-brotbackofen-rezepte-apfeltarte-1.jpeg\" alt=\"\" class=\"wp-image-12239\" srcset=\"https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/11\/merklinger-holzbackofen-pizzaofen-grill-brotbackofen-rezepte-apfeltarte-1.jpeg 640w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/11\/merklinger-holzbackofen-pizzaofen-grill-brotbackofen-rezepte-apfeltarte-1-300x169.jpeg 300w, https:\/\/www.dermerklinger.de\/wp-content\/uploads\/2020\/11\/merklinger-holzbackofen-pizzaofen-grill-brotbackofen-rezepte-apfeltarte-1-350x197.jpeg 350w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/figure>\n\n\n\n<p>Roll out the dough on a lightly floured work surface slightly larger than the pan. Carefully pick up the dough with a rolling pin and place it over the apples.
